Meatball Soup Recipe
Hi everyone! Today, I would like to share with you the recipe for a Meatball soup with spaghetti and vegetables. It is my granddaughter’s favourite soup. It is very easy to make, so it may be used as a fun activity for parents and children. Children can help out with making meatballs, washing vegetables, cracking eggs and serving the soup. This recipe will make 5-6 portions.
You will need:
- Ground beef / pork / chicken / plant-based alternative (Meatless burger patties may be minced and used as a meat substitute)
- 2 potatoes
- ½ large carrot
- ½ yellow onion
- Parsley or dill
- Spaghetti
- 2 eggs
- Salt & ground black pepper to taste
- 1 box of vegetable or chicken broth

Step 1: Peel and chop potatoes.
Step 2: Peel and chop the carrot.
Step 3: Peel and grind onion.
Step 4: Chop parsley or dill.
Step 5: Mix meat or a plant-based alternative with ground onion, eggs, salt, black ground pepper in a bowl, then make meatballs.


Step 6: Put chopped potatoes and carrot in a pot, cover everything with cold water, add a pinch of salt. Cook, stirring occasionally until the vegetables are halfway cooked.

Step 7:
Add vegetable or chicken broth and a pinch of black ground pepper.

Step 8:
Add meatballs and spaghetti.
Cook on medium heat until ready (8-10 minutes)

Step 9: Sprinkle the soup with parsley or dill.
